Since I have posted the last cookie post I made some cookies again, but not only to fill up my box 🙂 Though this would be sufficient for getting a very good reason. But I had another good one to made them, as a friend of mine celebrated his birthday on May 31. That is why I thought to make him a gift with my personal signature. As I knew that he likes lemon (well, I was not 100 percent sure but I know that his mother usually bakes a lemon cake for him ;-)), I thought on making some which contains lemon certainly. I made some research in lemon cookies and stumbled over one of my favorite blogs finally finding a cookie lemon recipe which contains white chocolate chips as well. As in my opinion white chocolate matches to everything else I knew they must be delicious. That’s why I immediately started to make them and I really hope they were well-received by him… They definitely were by myself… 😉
Lemon white chocolate chip cookies (found on London bakes):
125g butter,
55g sugar,
beat together in a bowl until light and fluffy
180g spelt flour,
1 lemon, zest and 1 tbsp of juice,
100g white chocolate chips,
add into butter-sugar mixture and work into a dough with your hands
dust a work surface with some flour and roll out the dough to the desired thickness, cut into shapes and place on the baking tray, let chill in the fridge for 30 minutes and bake for 15 minutes until golden brown. Voilà !!
